- HOW DO YOU COOK GREEN ESTON LENTILS? - Bring 4 cups water to boil in saucepan. Slowly stir in 1 cup lentils. Reduce heat to a simmer. Cook until lentils are still firm but cooked through. No pre-soaking needed. Wash and rinse well, add plenty of cold water and bring to the boil. Reduce heat and simmer for 20 minutes or until tender, drain and add to your favorite recipe. They are an acceptable ingredient for vegetarians, vegans, and lacto-vegetarians.
