The basis of making plum extract is the selection of ingredients
When making ume flesh extract (ume extract), we do not use the fully ripe Nankou plums that are normally used for umeboshi.
Green plums make the most delicious plum extract (plum extract).
The harvested green plums are carefully sorted using a machine invented by our company president that we call the "color sorting machine" (a machine that separates yellow plums from green plums) and by human eyes.

Grate the green plums

Again, work carefully to ensure the texture is fine and even.
There's no point in doing this unless you can grate the unripe plums so cleanly that it looks exactly the same as if you grated them the old-fashioned way by hand.

At this time, the factory is enveloped in the scent of green plums.
It's a once-a-year scent.
Boil the green plum juice
Next, we'll finally start boiling the plums in a pot. We'll squeeze the grated green plums using a piping cloth.
If the green plums have a fine texture at this stage, the plum extract can be extracted effectively.
It is also very important not to let the blessings of nature escape.
After grating the green plums, the juice is turned into plum juice and then simmered in a pot.
This is the hardest part. Keep an eye on the pot and if any scum appears, remove it immediately.
Then, remove as much of the scum as possible. This process is repeated for a while. It's the same with high-class cuisine, but carefully and meticulously scrubbing off the scum is an important factor in determining the final product. Of course, boiling in a big pot in the summer is extremely hot, but you can't cut corners. Until no more scum appears, you keep working hard to remove the scum while chanting, "I hope it becomes delicious."

After the scum stops appearing, continue stirring for about 8 hours. When the color turns black and the extract starts to form strings, a special analytical instrument is used to measure the doneness. If it is not boiled down enough, it will not be a good product, and if it is boiled down too much, the ume extract will become so hard that you cannot pierce it with a spoon.
The best part about making ume extract (plum extract) is the know-how of Kishu Umekura. If you boil it down further, the final amount will decrease, but it will be a tastier and richer ume extract (plum extract).
This determination is the final step in making ume flesh extract (ume extract).
