The Apostle:
Characteristics: San Francisco tang with a deep sour after taste. Comes back
to lifequickly, ours does it in 3 days, but were kinda experts. Gives off agreat
aroma, lots of gas and the bread is well heavenly.
Sowhats in a name? In our original line up of sourdough starters wehad The
Beast. During Covid we released The Black Death. In 2023our testing kitchen
in Austin Texas actually created an amazingsourdough starter by combining 2
of our not released starters, GrannyZ from San Francisco, im talking
someones old grandmothers disgustingsourdough starter (one of the best)
and Walt our first ever starterthat came from the settlers days, both these
sourdough yeasts areover 100 years old. You see we now have 20 sourdough
starters in ourarchive. So we combine this one and that one and see if it
createssomething amazing over time, got to give the yeasts time to marry.
Most of the time its meh and tossed. Now in Texas they seem to doeverything
really fast so when they combined Granny Z and Walt, itfinally made the most
amazing tasting bread, yes heavenly. Oneproblem they used the whole batch
of starter to make 6 loaves. What abunch of goofs. Anyways, it just so
happens that I was visiting themduring this experiment and realized thank god
that they still had abit of the married starter dried out in the measuring cup
they hadused. I can bring any starter back to life all I need is a bit. Okthe
process of resurrecting this starter took a bit more time thannormal, but the
master made it happen. Then the process goes on forabout another year.
Storing the starter, drying it out, reviving itover and over and yes baking bread
with it. By Easter 2024 it wasready to be released and with it being so close to
Easter themarketing team came up with the name The Apostle, we think were
funny. But alas, things got busy and the release did not happen sowe sat on it
for another year. Then Easter 2025 yes lets release TheApostle, but again life
got in the way. Such a disappointment. Butthen you know what happened the
pope dies and the whole team goeslets do it. Release The Apostle on the day
a new pope is chosen. Sothat is why it is first released on the exact day white
smoke is seenfrom the chimney of the Sistine Chapel, in case you don’t know,
that is the signal a new pope has been chosen.
