Overview
The name is derived from the name that the tea leaf bud has a large amount of white hair. This characteristic of tea leaves are called white (hakugou, paihao), but not all white tea leaves are used in white tea.
This is a particularly simple process in Chinese tea that is picked after the tea leaves are harvested (leaving them unattended, deflated and dehydrated with the fermentation process. Some of the six large tea varieties, only white tea does not apply a "kneaded twist".
Depending on the region, it may be used in outdoor sunlight and indoor atrophic conditions. The fermentation will not promote human fermentation such as using a blower or knead, or shaking, so the fermentation will slowly progress through the process. Even though it is fermented, unlike tea that has been fermented by microorganisms such as black tea (puer tea etc.), the main part is oxidized fermentation using enzymes that have the original tea leaves, which are similar to other fermented tea except black tea. At this stage, about 90% of the moisture evaporates. Tea leaves are stored in a bamboo basket called the "hamper", and dried on a fire to stop the enzyme fermentation. The white silver needle can be placed in a paper bag while the tea leaves are still hot. This purpose is to prevent damage by packing tea leaves in a hot and soft bag and intentionally steamed for several days to promote further aging. However, this process requires very skilled techniques, and many white tea comes with a "stuffy odor". The highest quality white tea has no stuffiness smell, and the color is uniform jade color. The gray and tan white brown indicates that the layer is thick and the handling was disordered during the atrophe.
Unlike most Chinese tea, the product is shipped as the same form of tea as the leaves because it does not have the kneading process (kneading twisting). For this reason, it is generally recommended to pour hot water around 90 degrees F into the heat-resistant glass to enjoy the swinging nature of the tea leaves. In this way, you can enjoy the swinging action of tea leaves like a bamboo leave. You can also drink delicious even if you brew in cold water.
